We have a long holiday weekend ahead of us and we plan to spend as much of it as we can outside (if it's not storming) some of it in the mountains, and some of it asleep, (here's hoping multiple naps will be the norm these next few days). But before I sign off early for our small stay-cation, I wanted to share a favorite whole wheat bread recipe I love from my aunt.

I loved the piece in Toast's newsletter about foraging around England, countrysides and urban parks alike. The company sells clothing and housewares, but occasionally share bits of stories and writing that are always nice to read. I thought it awesome that in a recent cookbook I read the author mentioned native "weeds" growing along city sidewalks and in empty lots as perfect additions to spring salads. I have heard about herbwalks in Utah, specifically up around bridal veil falls, little cottonwood and millcreek canyon areas. I think it would be fascinating, learning about the plants and herbs that grow wild in our area, and their edible and medicinal properties.

Have you ever gone on an herb walk? Have you even heard of one? Would you add dandelion blossoms and leaves to your next salad?

If I were to describe this week in two words, it'd be blah and meh. I for one, am happy to see the end of it. I hope that you've had a good week, and if yours has been similar to mine, I am sharing my go to tea recipe (more of a list of ingredients) for when I need a pick me up. It's soothing and warming, the kind of warm that permeates and extends through to your fingertips.

We have had blustery windy stormy days this week, and yesterday my health corresponded with the weather. I was useless in the kitchen, husband even commented on how wonderfully clean it was because I hadn't used it all day, and I haven't felt much for going anywhere or doing anything. I am feeling much better today, but still weak and grateful for a loving helpmeet, easy meals, and {leftover} soup to warm my chilled body.

I recently discovered that pepperidge farm puff pastry is dairy free. As far as I know it doesn't include butter. And although it may be a joke to puff pastry purists (who are probably scoffing that I didn't make my own), for us it meant this weekend included some hot sticky buns with a couple handfuls of pecans, the essence of Ina, and a lot o' bit of cinnamon in less than an hour.

remember when I asked if you were coming to that brunch class? I guess you're not. And even if you had decided to come last minute, we won't be there.

It all comes down to the fact that there were not enough people who registered online to let us know they were coming to the class, and since we pay for the food with registration money, it's not enough to cover. So Melissa and I decided to cancel tomorrow's amazingly delicious brunch class. I know, breaks my heart. I am sorry if this causes any inconvenience for anyone, but I hope people (you) will come to another class later this summer. And in the future, register online beforehand if you can so we know you want to be there!

I feel as though the last handful of posts have been greetings and farewells to the week. I haven't managed to write much in between them, much less share a recipe. However there are a few on their way, that is if blogger cooperates. Until then, a few pictures of the bouquet of lilacs I got from my mother's house that are currently making our kitchen smell like May.

And for the record, I think canning jars are the perfect vase for any flower.

I finally returned two cookbooks to the library for good, ordering them on sale par Amazon. I was so happy when they graced my front steps, and even happier when I got to warm their spines, and then cook from them. nerd much?

There are big things happening, things I won't go into detail about just yet but rest assured they are exciting/overwhelming/crazy big things.

I guess I can share at least one. I'm going to be an aunt again, and it's a boy.

In the spirit of the “noble art of getting things done” and the “nobler art of leaving things undone” I have been eliminating some non-essentials in my daily grind and attacking my to do/to be lists with a vengeance.

With all of my doing, going, and being, I am also finding time to just sit and be; listen; see. It's a nice balance.

I have four weeks until my big goal. Four weeks. Seems not too long ago I was thinking it was a good four months away. I hope I'm ready.

Mornings are my favorite part of the day. They are serene, familiar, and although they can be filled with the anticipation of what's to come, they are usually content with the moment. Mornings around our home are about routine. Just about every morning is the same, necessarily so. Our reliable and ordinary mornings are what get me through the day.

For the days when I wake up before the sun, I start with warming up my mind and body. After some sort of exercise/training I spend some time nourishing myself spiritually. Regardless of your beliefs, there is power in spiritual strength. Nothing will set you off on a better start than some time to meditate on greater ideas and truths, helping you think about things outside of yourself.

For days that I am woken by my two favorite people instead of my alarm, things happen in a different order, but I still make time to nourish my body mind and spirit.

Breakfast consists of a few choices. When it is cold, we eat warm foods, oatmeal, other stewed grains (always with flax, wheat germ, chia seeds and some type of fruit/nut), scrambles with toast, and on occasion jok. In the summer days (or days we feel like it) we make fruit smoothies and hot buttered (or coconut oiled) whole wheat toast. We're not much for alteration. I like my herbal tea with a spoon of honey and a little coconut milk, so it's creamy. And on special mornings when we have a lot of time on our hands to sit around in our pajamas, we plan ahead and make brunch.

Now we get into the wacked out hippie stuff we do every morning for health reasons.

First, with breakfast we take a little cod liver oil with vitamin d. There is substantial research out in the world, online and off, that has found the benefits of cod liver oil and the fatty acids it provides. We take the kind with added vitamin d3, which is especially beneficial during the time of year when the sun is minimal and warm enough weather to enjoy it is even more scarce. You may have heard for decades that the best thing to prevent the flu is vitamin c. It's not. Vitamin d will prove to be more helpful. But then I'm no doctor, however my doctor is.
a bonus? the type we buy is lemon flavored which means no fishy burps.

We take a few vitamins, or are they supplements, is that redundant? We take spirulina, for the b12; vitamin d3, when we were taking cod liver oil without vitamin d; I take a prenatal pill, yep, still nursing; and we also take primrose oil or borage oil, to assist absorption of the cod liver oil. For the most part, I like getting the nutrients we need from food, but because we seldom eat meat, no cow's dairy, and eggs only on occasion, I see necessity to supplement a little.

The best and probably the most sustaining part of our morning routine is after breakfast when we spend time together as a family. We read books together, dance together, play, and have a little prayer before saying our good-byes. Then it's to the window for waves and kisses to send off with daddy. It's the best half hour of the morning.

Once May arrives, all of a sudden it's late spring. Freak snowstorms are a thing of the past (hopefully), we are drawn outside more and more with less and less layers of clothing, I am looking forward to the day swim pools open for the summer season, and CSA's begin their first weeks of deliveries with a lot of greens.

On the last day of April, after waking to a few inches of blinding white snow, I helped put together a baby shower for a dear friend. I made my grandmother's lemon meringue pie in miniature portions. It's a pie that is dear to my heart, a staple at our family's Thanksgiving celebrations. It's a task not given to just anyone. Only the most experienced and attentive in the family are allowed to provide granny's lemon meringue, which is why I've never done it and this was my first time making anything like it on my own. I may have to submit my name into the lemon meringue lottery this year though, I think I did a pretty good job even if it wasn't exactly like hers.
