early bird
Sometimes we eat dinner early. Then when the munchies roll around, we nibble on things like brownies and popcorn. And maybe a glass of lemonade or apple cider, depending on the weather. It was raining/snowing/slushing all weekend so you would assume we were sipping on apple cider, but we had lemonade instead.

fancy fudge coconut brownies
adapted from the little red house
3/4 cup cocoa powder
1/2 cup whole wheat flour
1/2 tsp salt
1/2 cup coconut oil, liquid
1 cup natural cane sugar
1 1/2 tsp pure vanilla extract
2 large eggs
6 pecan halves
crème fraîche
Preheat oven to 325° degrees.
Sift together dry ingredients.
Combine the oil with the sugar, then with the vanilla and eggs, mix into the dry ingredients until just combined.
Spoon into 6 individual tartlette pans and place one pecan half at the center of each tartlette. Bake 18-20 minutes, or until an inserted toothpick comes out clean.
Allow to cool completely, serve with a dallop of crème fraîche or vanilla bean ice cream and berries.
notes:
- in place of coconut oil, feel free to use vegetable, canola, or a sweet nut oil like almond, hazelnut, or walnut instead. Or try Sheena's browned butter version, pretty sure it's out of this world.
- you can veganize this easily by substituting the 2 eggs with 2 1/2 ener-g egg replacer eggs.
- like heat with your chocolate? try adding 1/2 tsp cinnamon. mmm..
