this holiday we will be eating this granola for breakfast, and breaking the little cascarones i made atop each others' heads. maybe.

we made egg sandwiches with the leftover egg. A little garlic salt and a dallop of mayo between two slices of toast. yum.

the granola recipe is from my bestie, and it never fails. it's great with yogurt and fruit (I love plain yogurt mixed with honey), ice cream, or simply milk. I even microwave it with milk sometimes so it's like oatmeal. Really creamy oatmeal. It smells great while it's baking, has a great crunch, doesn't hurt your jaws to eat, and it's easy peasy lemon squeasy. hope you enjoy!

kristin's granola

¼ cup honey
½ cup water
1½ teaspoons vanilla
½ cup plus 2 Tablespoons brown sugar, packed
½ cup oil

4 cups oatmeal
1 teaspoon salt
½ cup wheat germ
½ cup ground flax
½ up powdered milk
½ cup sunflower seeds
½ cup pumpkin seeds
1 cup raisins

Preheat oven to 275°F.
In a sauce pan, mix and heat honey, water, vanilla, brown sugar and oil until sugar is dissolved and the mixture is bubbling. In a separate bowl mix remaining dry ingredients, except for the raisins, together. (Feel free to change and adjust what is used) Add honey mixture to the dry ingredients and blend until well coated. Spoon onto a cookie sheet with raised sides {or jelly pan} and bake for 45-50 minutes or until browned, mixing halfway through. Mix in raisins and store in a cool dry place.
