Can I just say how excited I was when I first read about this month's challenge? Then after a few weeks all that excitement turned into fear and thoughts of excuses I could make to not have to do it, I just didn't think I'd have the time, or the will to bake with this recently stifling weather! However the directions say to rise the bread in 90° environment, so technically it would have been perfect.

So, I'm a dance teacher. I love it so much the only problem is that the studio is quite a way away from my abode. So when I have an hour in between classes I teach, or say two hours between my last teaching class and a teacher rehearsal for our end of the year concert dance, I don't have enough time to drive home and back. Well, that and I don't want to spend the money on gas with it being as expensive as it is lately.

I was so excited, today was the first day of our town's farmer's market. Since it's early in the season there were only a handful of vendors, mostly selling herb starters. Then I saw the rhubarb and thought, I've always wanted to get rhubarb! So I did.

Now what?

I've never cooked or baked with rhubarb. So, I'm on the hunt for a recipe that is sweet, light, and delicious. Preferably using my new bunch of red and green veggies.

Lil' Kim, Ja Rule, you know my faves. Little, but with a lot of Flava Flave.

This little dejeuner was super easy to make, and I adore the cook 'em on the spot tortillas from Costco. Not quite as delish as homemade, but awesome if you've neither the time nor gusto to make your own.

Here's how I threw it down...

Heat up tortilla.
Sprinkle a lil' herb-ed chèvre on top.
Then add pastrami, spinach, tomato, red onion, and red pepper.
Toss with a dash of salt, pepper and parsley.
Wrap it up and voila!
