I made this cake for Aarny's birthday. He likes chocolate cake, but ONLY if it's moist, almost like brownies. But not brownies, heaven forbid. :) It was delicious and likely a sin, if that's possible.
They tell you to make it in two rounds, but I made it in a 9x13 pan so I didn't use anywhere near the entire amount of frosting I made. It would have been smart to cut the recipe in half, as I have done for you. aren't I nice?
** This recipe is for the cracker toffee I made at AJ's birthday party. There's no picture because it was all eaten before I could get one!!
Ingredients:
Box of crackers (saltines, club, wasa, matzoh, etc.)
3/4 c. sweet cream butter
3/4 c. brown sugar
3/4 c. Chocolate chips
3/4 c. nuts
easy to remember the amount of things eh?
Heat oven to 375º F.
Line baking pan with foil and top foil with baking parchment paper. Line bottom of pan evenly with unsalted plain matzoh boards (or saltines, club crackers, Wasa crackers, etc.) cutting extra pieces to fit.
In bottom heavy saucepan combine 3/4 c. sweet cream butter and 3/4 c. brown sugar. cook over medium heat stirring constantly until mixture comes to a boil. Continue cooking 3 minutes, stirring constantly.
Remove from heat and spread over crackers.
Place tray in oven and immediately reduce heat to 350º F.
Bake 12 minutes. Remove from oven, sprinkle 3/4 c. chocolate chips on top; place back in oven for 3 minutes longer. Remove and spread chocolate out. Top with 3/4 c. walnuts/pecans (optional).
Let cool, then break into pieces.
